Fresh Roasted Corn Salad

8 ears white corn

1 red pepper, diced

1/2 small red onion, diced

1 jalapeno, seeded and diced (optional)

2 tbsp olive oil

Salt, Pepper and Cumin to taste

1/2 bunch cilantro, chopped

1 lime wedge
